January HEAT – Jambalaya with Shannon Fleming

Our monthly Healthy Eating and Tasting (HEAT), presented by UAMS South Arkansas Center on Aging, Healthworks Fitness Center, SouthArk and the Medical Center of South Arkansas, was held Tuesday, January 8th at HealthWorks Fitness Center in El Dorado.

Shannon Fleming, Executive Director of Development for UAMS Reynolds Institute on Aging and Cancer Institute, was this month’s featured chef who brought a little taste of comfort to our monthly HEAT program.
He prepared Jambalaya, a culinary staple and dish based out of New Orleans. This recipe was hands down a bowl of comfort filled to the brim with flavor. The seasoned chicken, smoked turkey sausage and sauteed onion, bell pepper, celery and garlic filled the room with many flavors of the South with a few added ingredients of his liking.

He used healthier options such as brown rice, low sodium Chicken Broth to his recipe and discussed how making small changes to your lifestyle can really make a difference in how you feel.
